Chemical
Sciences study the elements that constitute the nature and the chemical
processes occurring in living organisms, such as the structure and
function of biomolecules.
The Chemical Sciences cover education from
the initial units to the more specialized ones. Units like Chemistry
and
Biochemistry are in the first year of the courses and give
the fundamental knowledge that will be applied in understanding and
developing more specialized concepts presented in the second and third
years of the courses.
In research, the area of Chemical Sciences
is responsible for chemical and nutritional characterization
of foods. Performed analysis include:
proximate (moisture, ash, protein, fat and carbohydrates), pH, acidity,
vitamins, minerals, carotenoids, polyphenols and antioxidants.
Physical Sciences study the properties of
matter and energy,
as well as
the phenomena that occur in nature, such as heat and mass transfer, the
behavior of biological materials when subjected to deformation and
their optical characteristics.
The Physical Sciences cover education from
the initial units to the more specialized ones. Units like Physics are
in the first year of the courses and give
the fundamental knowledge that will be applied in understanding and
developing more specialized concepts presented in the second and third
years of the courses.
In research, the area of Physical Sciences
is responsible for physical characterization
of foods. Performed analysis include: color, texture, viscosity, brix.
